Mystery Bread

 

As of yet untested. But I dunno, this one seems kinda messed up man...like, there's no sugar...maybe it's not really melon bread...





1. Pan 2. Topping

- 1 5/8 c flour
- 9g dry yeast
- 1 small egg
- 140 cc milk
- 2 2/3 Tbsp margarine or unsalted butter

- 1 1/2 c cake flour
- 2 2/3 Tbs margarine or unsalted butter
- 1 large egg

bread directions:
1. Combine the yeast and flour. Beat the egg, add it to the milk, and add that to the flour mixture. Mix well.
2. Place the margarine in the middle and kneed it with your hands until dough is smooth, about 15~20 minutes.
3. Place it in a bowl and cover with a damp cloth. Let rise until dough is about 2.5 times original bulk (~50min)

Topping directions:
1. Combine flour and margarine.
2. Beat the egg and add it in 3 portions, cutting it in. Let it rest for 20 minutes.
3. Shape the topping dough into 10 round balls and roll it out. Sprinkle the top with granulated sugar.

Remaining directions:
1. Divide the bread dough into 10 sections and kneed lightly while shaping them.
2. Bench time 10 min. After that, cover them with the rolled out topping and let rise again until double in bulk (30 min).
3. Bake at 160 C for 15 minutes.
